As pessoas locais dizem que foi na freguesia de Teixeira, no concelho de Baião, que este bolo castanho e de formato rectangular começou por ser feito, e daí, portanto, o seu nome. “Biscoito” é outra palavra para “bolo” nestas paragens, por isso há quem lhe chame bolo ou mesmo doce da Teixeira.
Este bolo existe, porém, em muitos outros sítios, e em cada um deles é frequente encontrar diferenças. A explicação para esta disseminação do doce tem que ver com o contexto em que começou por ser feito: era feito para ser vendido em festas e romarias, e assim viajou ao longo do tempo por uma certa região norte. Hoje, podemos vê-lo em vários locais, à venda todo o ano, incluindo em bancas à beira das estradas.
Sónia Pereira, neta de produtores do Biscoito da Teixeira, já utiliza batedeiras industriais e um forno moderno, mas mantém o fogo a lenha, e isso nota-se no sabor. As gentes do Norte conhecem bem este doce. No seu imaginário ainda está o formato, a cor, o sabor e a associação com as festas e romarias antigas.

Locals say that it was in the village of Teixeira, in the municipality of Baião, that this brown, rectangular cake started to be made, hence its name. “Biscoito” (“biscuit”) is another word for “cake” in these parts, so there are some who call it cake or sweet of the Teixeira.
This cake exists, however, in many other places, and one often finds differences between them. The explanation for this propagation of the cake has to do with the context in which it came about: it was initially made to be sold in folk fests, religious or otherwise, thus it traveled around a certain northern region of Portugal. Today we can see it in many places being sold all year round, including in stands by the road.
Sónia Pereira, granddaughter of Biscoito da Teixeira producers, uses industrial blenders and modern ovens now, but she keeps the fire fueled with wood, and that shows up in the flavor. People from the north of Portugal know this sweet well; in their memories there is still the shape, the color, the flavor, and the association with old folk fests.
