Em Vimioso, vila do extremo nordeste de Portugal, conhecemos a Sr.ª Rosa da recente Confeitaria Rosita. É recente mas já há muito que a Sr.ª Rosa confecciona doces por encomenda. Aliás, foi por as encomendas não pararem de crescer que achou boa ideia deixar o seu emprego e finalmente abrir a confeitaria.
Estamos em terra de amêndoa, por isso amêndoa não podia faltar a este pastel. O que o torna diferente de outros, porém, é a sua massa muito fina, que tem de ser amassada durante várias horas para poder ficar assim, estaladiça e praticamente transparente. Esta massa serve de base a um doce de ovos que, depois de cozinhado, fica com uma textura macia e húmida, formando no interior espaços parecidos a favos de mel, mais os bocadinhos de amêndoa. É uma receita que uma senhora da terra já falecida, Dona Conceição, ensinou à Sr.ª Rosa, que entretanto introduziu as suas pequenas alterações. Por aqui, pastéis de amêndoa era tradição fazer-se, mas hoje em dia são os da Sr.ª Rosa, a Rosita, os pastéis de referência.

In Vimioso, a town in the northeastern area of Portugal, we met Mrs. Rosa from the recently established Confeitaria Rosita. It is a new place but Mrs. Rosa has been a confectioner for a long time, working only by preordering. In fact, it was because she had so many preorders that she thought it was a good idea to quit her day job and finally open her own shop.
We are in a land of almonds, so almonds couldn’t be absent from this tartlet. What makes it different from others, however, is its extremely thin pastry, which has to be kneaded for several hours to be like that, flaky and virtually transparent. This pastry is the recipient for an egg cream that, after baking, has a soft and moist texture, forming on the inside many spaces resembling honeycomb cells, plus the bits of almond. It is a recipe that an already deceased lady from town, Mrs. Conceição, taught to Mrs. Rosa, who has introduced some changes of her own since then. Around here, almond tartlets were a tradition, but today it is the ones from Mrs. Rosa, called Rosita, the most distinctive.
