Simples e deliciosa.

In the municipality of Oliveira do Hospital you can find a “tigelada” that is typical of the center of the country. Older generations used clay pots, taller and wider than the tigelada pots from the Abrantes area, for example. But in the restaurant Varandas Verdes, in Oliveira do Hospital, they serve local tigeladas in single doses. The pots are also tall, but quantities are much more proportinal. The ingredients are just milk, eggs, sugar, cinnamon and lemon zest. Rosa Pires, who is the owner and cook, learned to make this local specialty with her mother-in-law, and she also got from her mother-in-law the habit of accompanying the tigelada with “arroz doce”, as is the custom here. The tigelada becomes a much wetter and more interesting dessert. Simple and delicious.
